Mexican Hot Chocolate using Thermomix®

Ingredients

700ml cashew milk (or preferred milk)

30g cacao powder

50g honey or coconut sugar

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 tsp ground chillies

pinch of salt

extra cashew milk or coconut cream to serve (optional)

Method

Place all ingredients into the Thermomix and cook 7 mins/80C/sp 4; or heat up in a saucepan on the stovetop until hot but not boiling, stirring now and then.

To froth: blend in Thermomix 30 sec/sp 7, increasing speed slowly from 1-7. Or pour into a blender and blend carefully until frothy.

Pour into cups and swirl in a little extra milk or coconut cream if desired.
